I threw this together tonight and served it over rice. Not too bad.
(makes 4-5 servings)
1 lb lean ground beef
3 white potatoes, quartered
2 carrots, chopped
4 cups of beef broth
1 packet taco seasoning
Brown beef in a large stock pot. Drain if needed. Add broth, chopped vegetables, and taco seasoning. Bring to boil, then reduce heat. Simmer for 35-40 minutes.
I think that next time, I’ll probably add onion and celery, and diced tomatoes.
